Chocolate Chip Oatmeal Bites

Quick little recipe coming at ya!


These little babies have been my go to pre-workout snack lately and I’m loving it. They are mostly carbs & lower in fat which makes them a little easier to digest before a workout. What’s even better is that they’re beyond delish and super easy to make. Lately, I’ve been making a batch on Sunday for the whole week.


Honestly, these little oatmeal bites/cookies are super versatile. They could be a quick pre-workout snack, dessert, or even part of breakfast. However, if I was to have these for breakfast I’d add some peanut butter and likely have some eggs on the side. And I’d probably have AT LEAST two of these little babies.




Serves: 15 bites

Prep Time: 5 minutes–Cooking Time: 12-15 minutes


Ingredients

  • 2 Ripe bananas

  • 1.5 cups old fashioned oats

  • 1/3 cup chocolate chips of choice (I’ve been using Ghirardelli 60% bittersweet chocolate pieces

  • 1 tsp vanilla

  • 1/4 tsp salt

  • 1 egg

Instructions

1. Preheat oven to 350 degrees. 2. In a small bowl, mash bananas. Add in the egg, vanilla extract and salt. Mix to combine. 3. Add oats to a large bowl along with chocolate chips. Mix to incorporate, then add in wet ingredients and stir to combine. 4. Using your preferred scoop, I use 1/8 measuring cup, scoop mix onto baking tray. 5. Bake for 12-15 minutes depending on your oven. Let cool, then enjoy!
